We evolved to seek ripe fruits, for example, which are sweet, but also have textures and flavors which pure sugar cannot give. Recipes aren’t an exact science, more of an outline on how to get there. Most recipes aren’t written with every ingredient weighed to the gram. They call for things like one tomato or two onions. The size can very greatly in these. This can have a trickle-down effect.
